Chile Lime Chip Corn Salad

This Chile Lime Chip Corn Salad is the kind of side dish that disappears fast at any cookout or taco night. Inspired by esquites, it starts with sweet corn, then we add crisp bell peppers that get tossed with our spicy mayo, fresh lime juice, cilantro, creamy avocado, and plenty of crumbled queso fresco. The real finishing touch? A handful of our crushed Chile Lime Tortilla Chips on top for extra crunch and flavor. It’s creamy, tangy, a little spicy, and comes together with simple ingredients for an easy crowd-pleasing dish.

Ingredients
  • 1 bag frozen corn, cooked and lightly charred
  • 2 bell peppers, diced
  • 2–3 tbsp Smash Kitchen Spicy Mayonnaise
  • 1 avocado, diced
  • ½ lime, juiced
  • Handful cilantro, chopped
  • Queso fresco, crumbled (about ½ cup or to taste)
  • 10–12 Smash Kitchen Chile Lime Tortilla Chips, crushed
  • Salt + pepper, to taste
Instructions
  1. Heat a skillet over medium-high heat and cook the frozen corn for 8–10 minutes until warmed through and slightly charred.
  2. Dice the bell peppers and avocado, chop the cilantro, and crumble the queso fresco.
  3. In a large bowl, combine the corn, bell peppers, cilantro, avocado, queso fresco, spicy mayo, and lime juice. Stir until evenly coated.
  4. Add salt and pepper to taste.
  5. Top with crushed chili lime chips right before serving for extra crunch. Serve chilled or slightly warm.
